The North Peak and Grizzly Peak family of beers and Civilized line of spirits are all produced at a new 5,600-square-foot facility within the Bowers Harbor Inn complex. Ground was broken in fall 2008 on the $1.1 million building and the facility was completed during the spring of 2009. Every nuance and detail of the 51.5 barrel brewing system and 1000L pot still system was driven by brewmaster/distiller Mike Hall’s exacting requirements. In fact, this is the only brewery in North America with a carbonator, which provides better head retention and lower dissolved oxygen levels resulting in longer shelf life (up to 1 year of shelf life).
In line with Northern United Brewing Company’s dedication to conservation, the facility employs a Clean-in-Place (CIP) system that filters and reclaims cleaning chemicals so they can be used multiple times. When their useful life runs out, the cleaners are diluted so there is no environmental impact whatsoever. In addition, the brewing facility is lit by compact fluorescent light bulbs (CFLs) to reduce energy consumption and is heavily insulated to contain heat.
Partnering with Mike on all North Peak and Grizzly Peak recipes is world-renowned brewmaster Ron Jeffries. In addition to working with Mike, Ron heads up the third line of beers in the Northern United Brewing Company family: Jolly Pumpkin Artisan Ales in Dexter, MI. Jolly Pumpkin beers are known for their religious commitment to open fermentation and aging. Every step of the process at Jolly Pumpkin Artisan Ales is carefully controlled by Ron to bring about the most complex and refined Belgian-styled beers imaginable. As a result of this dedication, most Jolly Pumpkin beers will continue to mature and mellow for quite some time when cellared at home.
